Holy Moly…Really Easy Guacamole!

There’s no need to buy store-made guacamole or even make from a mix when all it takes is a few key, inexpensive ingredients and less than 10 minutes to spare.

My family loves guacamole and lucky for me, it’s really easy make.  I usually pick up a bag of five avocados when they’re on sale – sometimes for as little as $2.88 a bag.  Plan ahead, though, because they are generally green and hard as a rock at the supermarket. Ripe avocados are your friend and you’ll need to wait until the skins are black and they are soft and squishy to the touch. Often times, the bags of avocados contain a selection with different degrees of ripeness, which give you more flexibility on when to use.

Here’s what you’ll need:
2 ripe avocados
juice of one lime
1 chopped Roma tomato
¼ cup chopped fresh cilantro
1 or 2 cloves of fresh garlic crushed (depending on taste)
1 or 2 Tbsp chopped red onion
½ teaspoon kosher salt

How to make:
Wash and dry the avocados, lime, tomatoes and cilantro. Cut avocados horizontally and twist to open and remove the pit.  Scoop out the flesh and immediately squeeze the juice of one lime on top and then mash with either a masher or a fork.  Once mashed, add the crushed garlic and sprinkle the salt (to taste), add the chopped cilantro, chopped red onion and stir in the tomatoes.

As an alternative to using a fork and bowl, a Molcajete could be used for a more authentically prepared Mexican dish. A Molcajete is a mortar and pestle made from volcanic rock. I have one myself and use it to make guacamole and salsa. This video describes in more detail.

Chill in the refrigerator for 30 to 60 minutes before serving.

The only thing that is a bit fussy is the cleaning, drying and chopping of the cilantro and even so, it’s not much of an effort. I will continue to make again and again and hope you will too!
