Keep Your Eyes Peeled On These Potato Pancakes!

Today’s post changed course completely when I spotted a rock-bottom sale on russet potatoes.  It was a start-the-car and stop-the-presses kind of moment when I saw 5 lb. bags for only 49¢.  I immediately knew I could put these spuds to good use and off I went with two bags for me and two for a friend. Yes, the special was so good that I couldn’t help but text my friend and let her get in on the savings too!

Russets are so versatile and though these ones were on the small side, the size didn’t matter since I’d be peeling and chopping or grating anyway.

I looked for a new and different recipe and found one for potato latkes (potato pancakes) in my Good Housekeeping cookbook that sounded interesting.

Bubbe’s Potato Latkes
4 large baking potatoes
1 medium onion
1 large egg
2 Tbsp all-purpose flour or matzoh meal
1 Tbsp fresh minced parsley or dill
1 Tbsp fresh lemon juice
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon coarsely ground black pepper
3/4 cup vegetable oil for frying
Parsley sprigs for garnish

In review
The recipe was easy to follow and prepare. I decided to forgo making the homemade applesauce that was shown as an accompaniment, simply because I didn’t have any apples in the house.  I do, however, plan to keep a copy on file and make in the fall during Ontario apple season. I served the latkes with a dollop of sour cream.

It was fun making something a little different like this. What’s more, my family members each had seconds.  I used about a third of one of the bags to yield about 10 latkes and I peg the cost to prepare at less than 20¢ in total.

The remaining potatoes will be used in the coming weeks. Some will be mashed and others will be chopped into chunks and used in soup.  I will store them in my cellar on a shelf where they’ll keep fresh for at least a month.

On the “Sugar Scale” [my unofficial recipe rating system], this recipe scored a nine out of 10. The ingredients were extremely inexpensive and there was very little mess to clean up. Plus, it took me far less time to prepare than the recipe stated. The time I saved was likely from not making the applesauce. Most of all, my family really liked the latkes and I’ll most definitely be making this recipe again.

  1. Potato pancakes is something I like to whip up whenever I have potatoes that are about to go bad…I find the Yukon golds most tasty for me…and I like to spread them with plain yogurt and smoked salmon (if I have some on hand) or grated cheddar which I always have on hand.
